Simple Same Day Sourdough Baguettes

These homemade sourdough baguettes are just as easy as my same day sourdough loaf. I use the exact same dough recipe and just make some simple changes in the shaping and baking. These baguettes are ready to eat in 4.5 hours. Follow along with me as I make simple same day sourdough baguettes.

Two nights ago, I made chicken parmesean with spaghetti per my hunsbands request (his favorite Italian meal). Since I was feeling a bit under the weather, he went up to the grocery store to get something for dinner and came home with chicken cutlets. I don’t usually buy chicken breast and prefer a whole chicken or chicken on the bone. I asked what I was supposed to do with chicken cutlets, and he said, “I was hoping we could have chicken parmesean.”

He bought so much chicken that we had plenty of leftovers for another night. Making extra of a meal and repurposing the leftovers are a great way to save time in the kitchen, especially with my goal to make this summer a flexible homemaking summer.

I repurposed the breaded chicken by chopping it up, making a little extra sauce and making some simple same day sourdough baguettes. And put together chicken parmesean hoagie sandwiches.

For the baguettes, I started the dough around 9 am, then baked the baguettes around 1. They were done in plenty of time for dinner. I also doubled the bread recipe. So now I have a loaf of unbaked sourdough ready in the fridge to be baked anytime.

Here is my original post on how to make a quick loaf of sourdough bread. The ingredients and instructions are the same up until the bulk fermentation.  After the stretch and folds, the dough will be shaped into baguette form. Then, allow them to rise for one hour in a warm spot before baking.

Mix together flour, starter, and water in a large bowl. I like to use my glass kitchen aid mixer bowl with the dough hook attachment. This makes for easy mixing in the beginning. First, I mix until all of the ingredients are incorporated. If the dough seems dry, it will moisten as it ferments. Cover the bowl and let sit for one hour.

Then, add 1 tsp of salt and do a series of stretches and folds with the dough until the salt is well incorporated. It’s probably about 10 stretches and folds. I do this right in the mixing bowl. Cover the bowl and let sit for 1 hour.

Do another series of stretches and folds, around 5 or 6, and finish with the dough in a taught ball shape. I do this right in the mixing bowl. Cover and let sit for 1 hour.

After the Bulk Fermentation, Shape your Baguettes

Remove the dough from the bowl with a dough scraper onto a lightly floured surface. After that, perform another series of 5 or 6 stretches and folds. Form the dough into a taught ball with the seams on the bottom of the ball.

Cut the dough ball in half with a dough scraper or knife. Shape each half into a long snake like baguette shape. I use a large baking sheet to bake my loafs on. So, I aim to make my baguettes about the length of the baking sheet. This makes two long baguettes.

Once the loaves have been shaped,  place them on a parchment lined baking sheet. Cover with a towel and place in a warm spot to rise. I like to put them on the back of my oven while it’s preheating.

Preheat the oven to 350F.  Once the bread has been rising for about an hour. Make small slices in the top of the bread with a bread lame or knife. Then bake for 25 to 30 minutes,  depending on how dark you want the crust.

After baking, remove the loaves from the oven and place them to cool on a cooling rack. Your simple same day sourdough baguettes are now read to enjoy!
