Peanut Butter Chocolate Chip Cookies

I love making cookies. Especially because it’s such a quick and easy dessert to make at the last minute.  It was one of the rare week nights that we didn’t have sports planned. We were sitting around the table, finishing up dinner, and we all felt like a sweet treat. So, I mixed up a batch of peanut butter chocolate chip cookies. They definitely hit the spot, and I probably ate a few too many. Follow along as I make peanut butter chocolate chip cookies.

Peanut Butter Chocolate Chip Cookie Ingredients:

  • 1 cup of creamy peanut butter.  I like to use peanut butter made with Valencia peanuts. The organic peanut butter from Costco is made with Valencia peanuts and is delicious.
  • 2.5 cups of all-purpose flour.  I used Einkorn all-purpose purpose flour. Einkorn flour is an ancient grain with a low gluten level and is easier to digest.
  • 1 tsp of vanilla
  • 2 cups of brown sugar. I like to use maple sugar. Maple sugar is full of vitamins and has a lower glycemic index compared to regular white sugar.
  • 1 tsp of baking soda
  • 1 tsp of baking powder
  • 8 tbsp of melted butter
  • 2 eggs
  • 1 tsp of salt
  • 1/2 cup of chocolate chips

Peanut Butter Chocolate Chip Cookie Recipe:

Begin by preheating the oven to 350F.  Start melting the 8 tbsp of butter.

Mix together the melted butter, sugar, eggs, peanut butter, and vanilla. Then, mix in the salt, flour, baking soda, and baking powder. Lastly, mix in the chocolate chips.

I like to store chocolate chips in the refrigerator so that they are cold before baking. When chocolate chips are cold before baking, they will hold their shape much better during baking.

Using a small ice cream scoop so that the cookies are the same size, scoop the cookie dough and place on a parchment lined baking sheet. 

Slightly flatten the cookies by using a fork and making a hashtag/pound sign in the center of each cookie.

Bake the cookies for 10 minutes.  Then, after removing them from the oven, allow the cookies to cool on the baking sheet for about 5 minutes before removing them to a cooling rack.

Your peanut butter chocolate chip cookies are ready to enjoy. This recipe yields 24 medium-sized cookies. I hope you enjoy this yummy sweet treat.
