
Warm banana bread muffins straight out of the oven with butter and a cinnamon sugar crusty muffin top are one of our favorite sweet treats. Perfect for breakfast or after-school snacks.
Recipe:
3 very ripe bananas
1 cup of fed and very active sourdough starter
If you need instructions on how to make a sourdough starter check out my post.
1.5 cups of all-purpose flour
1 stick of melted butter, wait until butter is slightly cooled before adding to the mixure
3/4 cup of brown sugar
1.5 tsp of vanilla
Mix and cover with a tea towel. Set on the counter and allow to ferment for 6 to 8 hours.
Add remaining ingredients after fermentation and just before baking.
2 eggs
1/2 tsp of salt
1 tsp of baking powder
1/2 tsp of baking soda
Fill muffin tins 3/4 of the way full.
Sprinkle cinnamon and sugar on top of muffins before baking.
Bake at 350° for 20 to 25 minutes in greased muffin tins.

Remove from oven and allow to cool in pan for 5 minutes before removing and transferring to cooling rack.
