
I always try to stock up on fresh cranberries around Thanksgiving so that I can use them in all different recipes for the holidays, not just cranberry sauce. It’s been several years that my family has enjoyed this delicious baked oatmeal seasonal breakfast. It can be prepared the night before and stored in the fridge overnight for a quick and easy breakfast in the morning. This cranberry apply baked oatmeal breakfast recipe feeds my family of five with large portions. Top it off with a dollop of yogurt.
Cranberry Apple Baked Oatmeal
Ingredients:
3 cups of rolled oats
1 cup of brown sugar (I love to use maple syrup sugar)
1 cup of milk or kefir
1/2 cup of melted butter
2 eggs
2 tsp of cinnamon
1 tsp of salt
2 tsp of vanilla extract
2 tsp of baking powder
1 cup of chopped fresh cranberries
A medium apple, chopped
1 cup of applesauce

Cranberry Apple Baked Oatmeal
Recipe:
Preheat your oven to 350°F. Start to melt butter on stove top or microwave while mixing together all of the ingredients. Add the melted butter and mix. Place mixed ingredients in 9×13. Bake for 30 to 45 min, until oatmeal is set and top has started to brown.
