Savory Breakfast Sausage Gravy

Biscuits and gravy, one of my favorite homemade meals. Especially when we need a quick and hearty ‘breakfast for dinner’ meal. I never cared much for the typical biscuits and gravy you get at your chain breakfast diner. Their gravy is often a mystery of ingredients and thick as paste. So, of course, this was the perfect opportunity to learn how to make my favorite breakfast sausage gravy.

Ingredients:

1 to 2 lbs of ground pork depending on how meaty you prefer your gravy. 2lbs would likely feed 8 people.

4 tbs of butter

4 tbs of flour

2 cups of milk

1 tsp of salt for each lb of meat.

ground pepper to taste

1 tsp of herbs de provance

3 tbs of maple syrup

2 tsp of ground onion

1 tsp of ground garlic

Savory Breakfast Sausage Gravy

Recipe:

Start by browning the ground pork in a frying pan over medium heat and breaking meat up evenly into pieces. Season with salt, pepper, onion, garlic, and herbs de provance. Stir in maple syrup. Cover and keep warm over low heat.

Melt butter in sauce pan. Mix flour and butter and let cook for 1 minute. Stir in milk. Stirring milk often wisk milk, butter, and flour mixture together until smooth. Bring the mik mixture to a slow boil, stirring frequently so the milk doesn’t burn. Once slightly thickened, add to seasoned ground pork and mix.

I like to eat my sausage gravy with a friend egg and biscuit. Here is my recipe for Einkorn biscuits. Can we talk about fried eggs? A cast iron skillet will give you the best results. Your eggs will be buttery and tender.

    Rachel, we are kindred sisters! I use a similar recipe. When my youngest son and family were in, he insisted on my pork sausage gravy ~of course in cast iron!
