Meatloaf Mashed Potato Pie

For dinner tonight, we had meatloaf mashed potato pie topped with gravy. I started out thinking I would make shepherd’s pie, and sometimes, when cooking, you have to go where the ingredients lead you, so my planned shepherd’s pie became meatloaf mashed potato pie. And I’m so glad it did, because it was delicious! It’s better than shepherd’s pie, in my opinion.  I will definitely make this mash up recipe again!

Meatloaf Mashed Potato Pie Ingredients:

Meatloaf:

2 lbs of grass fed ground beef

2 eggs

1 cup of frozen mixed veggies

1/3 cup of ground flax seed

2 tsp of salt

1 tbsp of Worcestershire sauce

2 tbsp of brown sugar (I used my favorite maple syrup sugar)

Pepper to taste

1 tsp of herbs de provance

1 tbsp on chopped fresh chives

Mashed Potatoes:

6 to 7 medium to large russet potatoes

4 tbsp of butter

3 tsp of salt

Pepper to taste

1 cup of milk

1 cup of shredded cheddar cheese

Gravy:

3 tbsp of butter

3 tbsp of flour (I like to use Einkorn all-purpose flour)

Salt and pepper to taste

1 to 1.5 cups of chicken bone broth. Add more broth if you prefer a thinner gravy.

Meatloaf Mashed Potato Pie Recipe:

Meatloaf:

Start by preheating your oven to 375F. In a large bowl, mix together ground beef, ehhs, salt, pepper, Worcestershire sauce, ground flax seed, frozen mixed veggies, herbs de provance, amd sugar. Mix all of the ingredients until well incorporated.  I like to give it a mix with my hands. Place the meatloaf mixture in an 8×8 or 9×9 pan and bake in the oven for 30 minutes.

Mashed Potatoes:

While the meatloaf is cooking, peel the potatoes and boil in a large pot of water. The potatoes will boil for about 20 minutes or until fork tender. Drain the water and mash the potatoes in the pot. I like to use this basic potato masher. I’ve had it since college. I’ve tried other fancier potato mashers, and I always come back to this one. It is easy to clean and use. Sometimes, simpler is better.

After the potatoes have been mashed and are still warm, add butter, salt, and pepper and mix until the butter is fully melted and incorporated. Then, mix in the milk.

Add a layer of mashed potatoes to the top on the meatloaf and sprinkle with shredded cheddar cheese.

Bake for an additional 30 minutes.  The meatloaf will no longer be pink, and the mashed potatoes browned.

Gravy:

While the meatloaf topped with mashed potatoes is cooking, start melting the butter. Once the butter is melted, stir in the flour. Allow the butter and flour to cook for a few minutes,  stirring often.  Then add the bone broth. Stir often until the bone broth is fully incorporated, there are no chunks, and the gravy has become thick. Reduce heat to low until the meatloaf is ready to be served.

When the meatloaf is done cooking, serve and pour the gravy over the meatloaf mashed potato pie and sprinkle with chopped chives. I hope you enjoy this savory and belly warming meal. Follow along @homesteadonlakeside for more homemade family inspiration and recipes.
