My family has joined the growing trend of playing pickle ball. We love playing the sport together as a family. Playing singles, doubles, and family tournaments. Having a pickle ball court right in our neighborhood has made learning and playing the sport so convenient.
We had just finished up a three hour family singles pickle ball tournament, and we were extra hungry. When we got home, I put together some sourdough French dip sandwiches with au jus sauce for dipping. Follow along as I made some hearty sandwiches with a savory au jus sauce.
I had some sourdough bread dough rising in the fridge from a few days before. It was easy to take the dough out of the fridge, shape it into hoagie style rolls, and bake for our sandwiches.
Au Jus Sauce Ingredients
- 4 tbsps butter
- 2 tsps worcestershire sauce (here is my favorite gluten free option)
- 1 small onion
- 2 cups of bone broth
- A pinch of salt
- Geound pepper to taste
Start with the Au Jus Sauce
While the bread was baking, I chopped a small onion and sautéd it in 4 tbsp of butter on medium heat for about 15 minutes in a medium sauce pan.

Once the onions were translucent and soft, I added 2 tsps of worcestershire sauce, a pinch of salt, ground pepper to taste, and 2 cups of chicken bone broth.
You can substitute any type of broth for this, but this homemade chicken bone broth made the au jus sauce extra flavorful and delicious. I made the bone broth from a chicken that we had smoked and roasted on the grill. So the broth had a lovely smoky flavor to it.
The other day, while at the grocery store, I bought one and a half pounds of sliced roast beef from the deli counter. This was the perfect amount for 8 small to medium French dip sandwiches.
Add the Roast Beef
After all of the ingredients for the au jus sauce have been added and stirred. Add the slices of roast beef to the sauce pan one at a time so that the roast beef doesn’t stick together.

Let the roast beef stew in the au jus for about 15 minutes. Gently turning/stiring the meat. The roast beef will turn from pink to brown, releasing flavors from the roast beef into the au jus sauce. Preheat the oven to 350F for melting the cheese on top of the sandwiches.

Slice the sourdough baguette loafs into equal hoagie lengths. I got 8 sandwiches from my simple same day sourdough baguettes. Here is the recipe for the sourdough baguettes.
Evenly divide the sliced roast beef, placing an even amount in each roll. Place 1 to 2 slices of your favorite cheese on top of the meat. I used Jarlsberg, one of our favorites.

Place the sandwiches on a baking sheet and warm in the oven until the cheese is melted.
Serve the sandwiches with a side of au jus sauce for dipping your French dip into. The au jus sauce yields enough sauce for 8 sandwiches.
