Cinnamon, spice, and chai, oh my. Just a few of my favorite fall flavors that make me feel all warm and cozy for the season. Grab a cup of tea and join me as I make sourdough muffins filled with apples and chai spices.

I love a good cup of tea. Chai latte is my favorite, but a cup of London fog is a close second. I sipped on both of those yummy teas while I enjoyed my apple chai spiced sourdough muffin.
Are you a tea drinker or coffee fan? When I was in college, I wished that I had been a coffee drinker. It probably would have made staying up late, studying for finals a bit easier, but I’ve never enjoyed the taste. Now, I have fully embraced being a tea drinker and absolutely love all of the different varieties of tea. Thankfully, my husband feels the same way about coffee and we enjoy our morning tea together.
Fall is my favorite time of year. It’s such a lovely transition time. It’s a time for things to slow down. When a chilly breeze will fill the air and you can put on your favorite sweater. As the days get shorter and the sunrise and sunset get more beautiful. The boys and I will use lanterns for our evening walks. We’ll collect perfectly capped acorns and bright red leaves. Fall’s beauty makes me slow down and take in the tiny little moments.
In the kitchen, I’ll light a few more candles, put on a simmer pot with cinnamon sticks and cloves, and bake all of the warm and cozy tasting treats.

Apple Chai Spiced Sourdough Muffins

- 2 cups of all-purpose flour
- 1 cup of sourdough starter (If you are interested in learning how to make your own starter, click here. Or for tips on how to keep your starter healthy, click here.)
- 3/4 cup of maple sugar or brown sugar
- 2 medium apples, peeled and chopped
- 4 ounces of apple sauce
- 1 tsp of cinnamon (I like to use cyleon cinnamon)
- 1/4 tsp of ground cloves
- 1/4 tsp of cardamom
- 1 stick (1/2 cup) of butter melted
- 1 tsp of vanilla extract (here is my recipe for homemade vanilla extract)
- 1/2 tsp of salt
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp of baking soda
Apple Chai Spiced Sourdough Muffins Recipe
The night before, start by melting the butter and peeling and chopping the apples. In the pot where the butter is melting, add the apples, apple sauce, cinnamon, cloves, cardamom, and vanilla. Simmer over medium heat for about 15 minutes.

In a mixer, add the flour, sourdough starter, salt, and sugar. Mix together and then mix in the butter apple mixture once the apples are soft and the spices are fragrant.
I recommend not letting these muffins ferment for more than 10 hours or the rise when baking won’t be as good, and your muffins may turn out a bit flat.
Cover and let your mixture sit overnight.
The next morning, preheat the oven to 350F. Add the remaining ingredients: eggs, baking soda, and baking powder, and mix well.
Prepare your muffin tin by greasing the muffin cups or using parchment paper muffin cups. I like to use these parchment paper muffin cups for easy clean-up of my pan.

Fill each muffin tin and sprinkle sugar and cinnamon on top of each muffin before baking. This recipe yields 12 large muffins.
Bake for 15 to 20 minutes or until the top is lightly browned. Poke a toothpick in the middle to check for doneness. The toothpick should come out clean. Let cool for 5 minutes in the muffin tin, then move to a cooking rack.
