Sandwiches for lunch are easy since we usually have a loaf of sourdough laying around. This lunchtime sandwich was particularly yummy with bacon, melted raw cheddar, and tomato with a drizzle of basalmic glaze. A take on the classic BLT.

Lunch is not my favorite meal of the day. It often feels like an interruption to whatever is being worked on. Whether that’s a school lesson or a beautiful day in the garden. If it were up to me, I would skip lunch most days and be satisfied with a handful of nuts and a glass of milk. My growing hungry boys are not so easily satisfied. So I try to make quick and easy lunches if we don’t have leftovers from the night before.
Start with a good bread
A key to this sandwich is having a delicious crusty loaf of fresh sourdough laying around. Our family can make a loaf of bread stretch for two days. So I usually try to make 3 loaves of bread a week. An easy way to do this is to double the bread recipe when I’m mixing up dough for a loaf of bread and store the uncooked dough in the fridge, ready to bake at any time.

A Sprouts grocery store was recently built around the corner from our house. I’m so thankful at how convenient it is to run up to the store and have healthy food options available so readily. They also have amazing prices when they are running their manager specials. I picked up 2 pounds of no added sugar, nitrate free bacon from the deli for $4! And they have specials like this all the time!
So we had loads of bacon and fresh tomatoes for a yummy addition to our lunchtime sandwiches.
I keep balsamic glaze in the pantry for an extra bonus to many meals, including pizzas, sandwiches, and salads. Here is the balsamic glaze we like to keep on hand.
Grilled Bacon Cheese and Tomato Sandwich Ingredients:
Slices of sourdough bread
Slices of raw cheddar cheese
Cooked bacon
Tomato slices
Balsamic glaze
Butter for grilling the bread

Grilled Bacon Cheese Tomato Sandwich Recipe:
I like to make grilled sandwiches in a cast iron. Start by heating up the pan and melting a tablespoon of butter in the pan.
Place your slices of bread in the pan. Load them with cheese, tomato, a drizzle of balsamic glaze, bacon, and top with another layer of cheese.
Use a lid over the pan while the sandwich is toasting and the cheese is melting. Flip the sandwich, add a bit more butter, and toast until golden brown and the cheese is nice and melted.

- 1 Large tomato
- 4 Tbsp Butter
- Balsamic glaze for drizzle
